Curry Flavored Potato Salad |  |
Ingredients
| 4 | lb.
unpeeled red potatoes
| | 2 | celery ribs, chopped
| | 1/2 | small red onion, diced
| | 3 | hard-cooked eggs, sliced
| | 2/3 | cup
fat-free sour cream
| | 1/2 | cup
light mayonnaise
| | 1/4 | cup
white wine vinegar
| | 2 | tbsp.
curry powder
| | 1 1/2 | tsp.
salt
| | 1/2 | tsp.
pepper

Directions
 | Cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool. Peel potatoes, if desired, and cut into 1-inch cubes. |  | In large bowl stir together potatoes, celery, onion and eggs. |  | Stir together sour cream, mayonnaise, vinegar, curry, salt and pepper. Gently toss with potato mixture. Serve immediately or cover and chill. |
