Cumin-Curry Pork Loin Roast

Ingredients

3 1/2lb.  boneless half pork loin roast 
1large clove garlic, cut into thin slivers 
2tbsp.  brown sugar 
1 1/2tsp.  curry powder 
1tsp.  cumin 
1/2tsp.  salt 
1/4tsp.  pepper 
1large onion, cut into wedges 

Directions

Preheat oven to 375°F. Cut several slits in pork roast; insert garlic slivers. In small bowl, blend brown sugar, curry powder, cumin, salt and pepper. Rub mixture evenly over pork roast.
Place pork in shallow roasting pan. Place onion wedges around roast. Add 1/3 cup water or chicken broth to pan. Roast 1 hour, 15 minutes to 1 hour, 30 minutes or until internal temperature is 155°F. Cover and let stand 5 to 10 minutes before serving. Refrigerate leftovers.
