Cucumber-Lime Salsa over Grilled Soft-Shell Crab

Ingredients

1/2cup  fresh lime juice, divided 
2tbsp.  honey 
2tbsp.  olive oil, divided 
8medium soft-shell crabs, cleaned 
1large seedless cucumber, chopped 
1cup  seeded and chopped tomatoes 
2tbsp.  chopped fresh cilantro 
1tbsp.  chopped green onions 
1/4cup  white wine vinegar 
1/8tsp.  salt 
1/8tsp.  freshly ground pepper 

Directions

Coat grill rack with nonstick cooking spray. Preheat grill to medium. For basting sauce, combine 1/4 cup of the lime juice, honey and 1 tablespoon of the olive oil in small bowl; set aside.
Immerse crabs in boiling water. Meanwhile, for salsa combine cucumber, tomatoes, cilantro, green onions, vinegar, remaining 1/4 cup lime juice, remaining 1 tablespoon olive oil, salt and pepper in container of food processor. Pulse only slightly so salsa stays chunky; set aside.
Brush crabs with lime-honey mixture. Grill crab, covered with grill lid, 5 to 7 minutes, basting and turning often. Serve with Cucumber-Lime Salsa.
