Crab and Tomato Ceviche

Crab and Tomato Ceviche

Ingredients

1lb.  imitation crabmeat chunks* 
1medium cucumber, peeled and chopped 
1large tomato, seeded and chopped 
3sliced green onions 
1/3cup  chopped fresh cilantro 
2serrano chile peppers, seeded and finely chopped** 
2cups  tomato juice 
1/4cup  lime juice 
1tsp.  garlic salt 
Tortilla chips 

Directions

Shred crabmeat. In medium bowl combine crabmeat, cucumber, tomato, green onions, cilantro and chiles. Stir in tomato juice and lime juice. Season with garlic salt.
Cover and chill at least 2 hours to blend flavors. Serve in small bowls with tortilla chips.
*Note: Persons with a shellfish allergy may be allergic to imitation crab meat. **Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water.
