Preheat oven to 325°F. Place beef in roasting pan coated with nonstick cooking spray. Sprinkle with seasoned salt and lemon pepper. Bake 1 hour. Add potatoes, carrots and onions. Bake 1 hour more or until thermometer registers 160°F.
Place roast on serving platter. Cover with foil and let roast stand 10 minutes before serving. Keep vegetables warm.
