Classic Sunday Beef Roast

Classic Sunday Beef Roast

Ingredients

1eye of round beef roast (about 3 lb.) 
1tsp.  seasoned salt 
1/2tsp.  lemon pepper 
124-oz.  pkg. baby potatoes 
4medium carrots, peeled and cut into 2-inch pieces 
3medium onions, cut into wedges 

Directions

Preheat oven to 325°F. Place beef in roasting pan coated with nonstick cooking spray. Sprinkle with seasoned salt and lemon pepper. Bake 1 hour. Add potatoes, carrots and onions. Bake 1 hour more or until thermometer registers 160°F.
Place roast on serving platter. Cover with foil and let roast stand 10 minutes before serving. Keep vegetables warm.
*Marinate time extra
