Citrus Baked Apples

Ingredients

6 to 8medium cooking apples (Rome Beauty, Granny Smith or Jonathan) 
2/3cup  sugar 
1/3cup  all-purpose flour 
1/2tsp.  ground cinnamon 
1/4tsp.  ground nutmeg 
1/3cup  butter 
1/2tsp.  orange peel, finely chopped 
1/2cup  orange juice 
1/4cup  water 
1tsp.  vanilla extract 

Directions

Preheat oven to 350°F. Lightly butter 13x9x2-inch baking pan. Peel and core apples. Place apples in prepared pan; set aside.
In medium bowl combine sugar, flour, cinnamon and nutmeg. With pastry blender cut in butter until mixture resembles coarse crumbs; add orange peel, stirring well. Spoon into centers of apples. Sprinkle any remaining crumb mixture over apples.
Combine orange juice, water and vanilla. Pour over apples. Bake 40 to 50 minutes or until tender.
