center cut beef tenderloin roast, trimmed and tied
Directions
Make rub for meat by stirring together salt and pepper to taste, lemon juice and olive oil in small bowl. Rub mixture onto both sides of tenderloin.
Place into roasting pan and let sit at room temperature 1 hour. Take meat from pan; set pan aside. Preheat oven to 375°F.
In large skillet over high heat, sear meat 2 to 3 minutes per side. Remove meat from skillet; place back into roasting pan.
Roast in oven until meat thermometer reaches 145°F (1 1/2 to 1 3/4 hours). Remove from oven; tent lightly with foil. Let stand 15 minutes. Serve thinly sliced on diagonal.
