Chopped Cabbage Salad

Ingredients

Dressing: 
1tbsp.  canola or vegetable oil 
1tsp.  grated lime peel 
1tbsp.  lime juice 
1tsp.  finely chopped, seeded jalapeño pepper* (optional) 
1tsp.  sugar 
Salad: 
5cups  thinly sliced Chinese cabbage 
1/4lb.  snow peas, halved crosswise (about 1 cup) 
1/3cup  sliced green onions 
1/3cup  chopped red bell pepper 
1seedless naval orange, peeled and sectioned 

Directions

Blend dressing ingredients in small bowl; add salt to taste; set aside.
In large bowl, combine remaining ingredients; mix well. Drizzle dressing over salad; toss to coat. Cover and refrigerate 1 hour to blend flavors, if desired.
*Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water.
