Caribbean Coconut Shrimp

Caribbean Coconut Shrimp

Ingredients

3tbsp.  olive oil 
1medium onion, minced 
1/2medium red bell pepper, diced 
1/2medium green bell pepper, diced 
2jalapeño peppers, seeded and minced* 
3cloves garlic, minced 
1medium tomato, diced 
1lb.  fresh shrimp, peeled, deveined and tails removed 
3/4cup  coconut milk 
Juice of 1 lime 
1/4cup  minced parsley 

Directions

Heat oil in large skillet over medium heat. Add onion, peppers and garlic. Sauté about 4 minutes or until soft; add diced tomato, stirring to mix well.
Add shrimp; stir to coat. Cook and stir 2 to 3 minutes or until opaque. Add coconut milk and salt and pepper to taste. Transfer to serving dish. Add lime juice and minced parsley.
*Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water.
