Directions
Heat oil in large skillet over medium heat. Add onion, peppers and garlic. Sauté about 4 minutes or until soft; add diced tomato, stirring to mix well.
Add shrimp; stir to coat. Cook and stir 2 to 3 minutes or until opaque. Add coconut milk and salt and pepper to taste. Transfer to serving dish. Add lime juice and minced parsley.
*Use caution when handling hot peppers. Wear disposable gloves or wash hands thoroughly in hot, soapy water.
