Blackened Catfish with Fresh Corn Relish

Ingredients

3corn cobs, shucked 
2large tomatoes, chopped 
4green onions, chopped 
1/4cup  chopped cilantro 
2tbsp.  lime juice 
1 1/2tsp.  plus 2 tbsp. Cajun seasoning, divided 
46-oz.  catfish fillets 
1tbsp.  olive oil 
Cilantro leaves, lime wedges (optional) 

Directions

For corn and tomato relish, place corn in microwave-safe dish; cover loosely with damp paper towels. Microwave on HIGH 5 minutes, turning over halfway through cooking. Let stand 3 minutes to cool slightly. Cut kernels from ears of corn; place in large bowl. Stir in tomatoes, green onions, cilantro, lime juice and 1 1/2 teaspoons Cajun seasoning; set aside.
Brush fish on both sides with oil and sprinkle with remaining 2 tablespoons Cajun seasoning. Grill on high heat 6 to 8 minutes on each side or until fish flakes with a fork. Serve fish with corn and tomato relish. Garnish with cilantro leaves and lime wedges, if desired.
