Beef and Broccoli Stir-Fry

Ingredients

11-lb.  flank steak or top round steak 
2tbsp.  vegetable oil, divided 
2cloves garlic, minced 
2cups  small fresh broccoli florets 
1medium onion, halved and sliced 
1medium tomato, cut into thin wedges 
1/2cup  bottled stir-fry sauce 
Hot cooked rice (optional) 

Directions

Slice beef across grain into thin strips. Sprinkle lightly with salt and pepper to taste. In large skillet, heat 1 tablespoon oil over medium-high heat. Add beef and garlic; stir-fry 5 to 6 minutes or until accumulated juices evaporate and beef is browned. Remove and set aside; keep warm.
In same skillet, heat remaining 1 tablespoon oil over medium-high heat. Add broccoli and onion; stir and cook 2 minutes. Reduce heat to medium. Add 2 tablespoons water; cover and cook 3 to 4 minutes longer or until broccoli is bright green and onion is crisp-tender.
Add tomato, stir-fry sauce, and 1/4 cup water. Cook and stir 1 to 2 minutes or until heated through and tomato is softened. Serve over hot cooked rice, if desired.
