Preheat grill to medium indirect heat. Place ribs on 3 layers of heavy-duty foil (about 18x24 inches). Sprinkle ribs lightly to taste with salt and pepper. Sprinkle with garlic and oregano. Top with tomato, onion and olives, if desired. Drizzle with olive oil and vinegar. Top with 3 more (18x24-inch) layers of heavy-duty foil. Fold edges together; crimp to seal, leaving room for expansion.
Place rib packet on grill. Grill over indirect heat, covered, 2 1/2 to 3 hours or until ribs are tender. Remove from grill.
