Balsamic Baked Cod and Chestnuts

Ingredients

46-oz.  cod fillets (thaw, if frozen) 
2/3cup  purchased chopped chestnuts or slivered almonds 
2cloves garlic, chopped 
1/4cup  olive oil 
1/3cup  balsamic vinegar 
2tbsp.  Dijon-style mustard 
2tsp.  chopped fresh sage 
Additional sage sprigs (optional) 

Directions

Preheat oven to 425°F. Lightly coat shallow baking dish with nonstick cooking spray. Place fillets in baking dish.
Combine chestnuts, garlic, olive oil, balsamic vinegar, mustard and chopped sage in small bowl. Pour over cod.
Bake 15 to 20 minutes or until fish flakes with a fork. Top with sage sprigs, if desired. Serve immediately.
