Coat grill rack with nonstick spray. Preheat grill to medium. Trim fat from steak. Rub with sesame oil. Season with salt and pepper to taste. Grill to desired doneness. Allow 10 to 12 minutes for medium-rare and 12 to 15 minutes for medium.
While meat is cooking, blanch bok choy in boiling water 2 minutes; drain and arrange on serving platter.
Cut steak into 1-inch slices crosswise. Arrange meat on top of bok choy.
