Asian Crunchy Slaw

Ingredients

4tsp.  vegetable oil 
1tsp.  freshly grated lime peel 
1tbsp.  fresh lime juice 
1tbsp.  rice wine vinegar 
1tbsp.  Thai fish sauce 
1tsp.  sugar 
2 1/2cup  shredded green cabbage 
2 1/2cup  shredded red cabbage 
1/4lb.  fresh snow peas, halved crosswise (about 1 cup) 
1/3cup  each sliced green onions, red bell peppers and yellow bell peppers 

Directions

In small bowl, whisk together oil, lime peel, lime juice, vinegar, fish sauce and sugar. Add salt and pepper to taste; set aside.
In large bowl, combine green cabbage, red cabbage, snow peas, green onions, red bell peppers and yellow bell peppers; mix well. Drizzle dressing over cabbage mixture; toss to coat.
Cover and refrigerate 1 hour to blend flavors.
