Tuscan White Bean Salad

Ingredients


1medium onion, thinly sliced 
2cloves garlic, minced 
2tbsp.  olive oil 
119-oz.  can  cannellini beans, rinsed and drained 
114 1/2-oz.  can  whole tomatoes, cut up 
1tsp.  poultry seasoning 
1/3cup  red wine vinegar 
Garlic bread (optional) 
 

Directions

  1. In a large skillet cook onion and garlic in hot oil until tender. Stir in beans, undrained tomatoes, and poultry seasoning. Bring to a boil; reduce heat. Simmer, covered, for 10 minutes, stirring occasionally.
  2. Stir in vinegar and salt and pepper to taste. Cook, uncovered, about 5 minutes more or until desired consistency. Serve with garlic bread, if desired
