Tortellini Primavera Salad

Ingredients


2zucchini, cut in half lengthwise 
2yellow squash, cut in half lengthwise 
19-oz.  pkg. refrigerated cheese-filled tortellini 
1pint cherry tomatoes, halved 
1/2cup  chopped green onions 
1bottle (8-oz.)  Caesar salad dressing 
1/4cup  sliced almonds, toasted 
1/4cup  shredded Parmesan cheese 
 

Directions

  1. Coat zucchini and squash lightly with nonstick cooking spray. Grill on a lightly greased grill rack over medium-high heat 5 minutes on each side or until crisp-tender. Cut into bite-size pieces; set aside
  2. Cook tortellini according to package directions. Drain and place in a large bowl
  3. Add zucchini mixture, tomatoes, onions, and dressing to tortellini, tossing gently to coat. Sprinkle with almonds and Parmesan cheese
