Swiss and Onion Fondue

Ingredients


1 1/2cups  finely chopped onion 
2tbsp.  butter 
1clove garlic, minced 
4tsp.  cornstarch 
1cup  reduced-sodium chicken broth 
1tbsp.  Dijon-style mustard 
2tsp.  lemon juice 
3cups  shredded Swiss cheese (12 oz.) 
French bread, cut into 1-inch pieces; roast beef, cut into 3/4-inch pieces and/or broccoli florets 
 

Directions

  1. In large saucepan cook onion in hot butter over medium-low heat about 15 minutes or until onion starts to brown, stirring occasionally. Stir in garlic. Cook 1 minute more. Stir in cornstarch. Add chicken broth, mustard and lemon juice. Cook and stir until mixture comes to a boil. Reduce heat.
  2. Gradually add cheese, a little at a time, stirring until cheese melts. Do not boil.
  3. Transfer to fondue pot; keep warm. Serve immediately with bread cubes, roast beef pieces or broccoli florets.
