Simple Seared Sea Scallops

Ingredients


12large sea scallops 
1/2tsp.  chili powder 
1/2tsp.  cumin 
1/2tsp.  dried oregano 
2tbsp.  olive oil 
 

Directions

  1. Dry scallops well with paper towels; set aside. In small bowl stir together chili powder, cumin, oregano, and salt and black pepper to taste. Dust scallops on both sides.
  2. Heat oil in large skillet over high heat. Do not crowd scallops; cook in batches if necessary. Sear scallops just until opaque, about 3 minutes per side. Serve warm.
