Simmered Italian Spinach and Chicken

Ingredients


2skinless, boneless chicken breast halves, cut into bite-size pieces 
2cloves garlic, minced 
2tbsp.  chopped shallots 
1(14 1/2-oz.)  can diced tomatoes with basil, garlic and oregano 
3/4cup  shredded Parmesan cheese 
1(3.5 oz.)  pkg. sliced pepperoni 
2(10-oz.)  pkg. frozen chopped spinach, thawed and well drained, or 8 cups packed fresh spinach leaves 
2tbsp.  chopped fresh basil 
1cup  shredded mozzarella cheese (optional) 
2cups  hot cooked white rice 
1tbsp.  olive oil 
 

Directions

  1. In large skillet, cook chicken, garlic and shallots in 1 tablespoon hot oil over medium heat 5 minutes or until chicken is no longer pink.
  2. Stir in tomatoes, Parmesan cheese and pepperoni. Simmer, covered, 20 minutes, stirring occasionally.
  3. Add spinach and simmer, covered, 10 minutes, stirring occasionally.
  4. Sprinkle with mozzarella cheese, if desired. Serve over rice.
