Simmered Italian Spinach and Chicken |

Ingredients
| 2 | skinless, boneless chicken breast halves, cut into bite-size pieces
| | 2 | cloves garlic, minced
| | 2 | tbsp.
chopped shallots
| | 1 | (14 1/2-oz.)
can diced tomatoes with basil, garlic and oregano
| | 3/4 | cup
shredded Parmesan cheese
| | 1 | (3.5 oz.)
pkg. sliced pepperoni
| | 2 | (10-oz.)
pkg. frozen chopped spinach, thawed and well drained, or 8 cups packed fresh spinach leaves
| | 2 | tbsp.
chopped fresh basil
| | 1 | cup
shredded mozzarella cheese (optional)
| | 2 | cups
hot cooked white rice
| | 1 | tbsp.
olive oil

Directions- In large skillet, cook chicken, garlic and shallots in 1 tablespoon hot oil over medium heat 5 minutes or until chicken is no longer pink.
- Stir in tomatoes, Parmesan cheese and pepperoni. Simmer, covered, 20 minutes, stirring occasionally.
- Add spinach and simmer, covered, 10 minutes, stirring occasionally.
- Sprinkle with mozzarella cheese, if desired. Serve over rice.
