Shrimp and Cheese Tortellini

Ingredients


19-oz.  pkg. refrigerated fresh cheese-filled tortellini 
3/4cup  shelled and deveined shrimp (thawed, if frozen) 
1tbsp.  butter or margarine 
1(12.5-oz.)  can condensed cream of shrimp soup 
1/4cup  milk 
1/4cup  grated Parmesan cheese 
2tsp.  grated lemon peel 
1/8tsp.  ground pepper 
1cup  frozen peas 
1cup  halved pear tomatoes 
 

Directions

  1. Cook tortellini according to package directions. Drain and keep warm.
  2. Meanwhile, in 12-inch nonstick skillet, sauté shrimp in butter over medium-high heat until shrimp turn pink. Blend in soup, milk, cheese, lemon peel and pepper. Bring to boiling, stirring. Add peas and tomatoes; reduce heat and simmer 2 minutes to blend flavors. Stir in tortellini and heat through.
