Sage-Breaded Pork Tenderloin

Ingredients


2pork tenderloins (about 1 lb. each) 
2tbsp.  Dijon-style mustard 
1/2cup  unseasoned breadcrumbs 
1/2tsp.  dried sage 
1/4tsp.  salt 
1/8tsp.  pepper 
1tsp.  olive oil 
 

Directions

  1. Preheat oven to 425°F. Coat shallow baking dish with nonstick cooking spray.
  2. Rub each tenderloin with 1 tablespoon mustard.
  3. In shallow dish or pie plate, combine breadcrumbs, sage, salt and pepper. Roll each tenderloin in mixture to coat.
  4. Place pork in baking dish; drizzle with olive oil. Bake 35 to 40 minutes, turning halfway through, until instant-read thermometer registers 160°F. Let pork stand 5 minutes before carving.
