Pork Tenderloin with Orange-Cranberry Sauce

Ingredients


21-lb.  pork tenderloins 
1tsp.  garlic pepper 
3/4tsp.  dried thyme 
1cup  whole-berry cranberry sauce 
1/3cup  orange marmalade 
4tsp.  cider vinegar 
1large green onion, thinly sliced 
1 1/2tsp.  grated orange peel 
1/4tsp.  salt 
1tbsp.  chopped fresh cilantro (optional) 
 

Directions

  1. Preheat oven to 400°F. Trim excess fat from tenderloins. Sprinkle garlic pepper and thyme evenly over tenderloins. Place on broiler rack in broiler pan or in shallow baking pan. Roast 25 to 35 minutes or until meat thermometer registers 160°F. Let stand 5 minutes.
  2. Meanwhile, in medium bowl, blend cranberry sauce, orange marmalade, vinegar, green onion, orange peel, salt and cilantro, if desired. Set aside. Cut pork into thin diagonal slices; serve with cranberry mixture.
