Mandarin Chicken Salad

Ingredients


7cups  shredded napa cabbage 
2cups  chopped, cooked chicken or turkey 
2cups  chopped walnuts 
2cups  grape tomatoes, halved 
115-oz.  can mandarin oranges, drained 
1/2cup  golden raisins 
1/2cup  rice vinegar 
1/4cup  low fat mayonnaise 
2tsp.  sugar 
13-oz.  can chow mein noodles 
 

Directions

  1. In large salad bowl toss together cabbage, chicken, walnuts, tomatoes, oranges and raisins.
  2. To prepare dressing whisk together vinegar, mayonnaise and sugar in small bowl. Season to taste with salt and pepper.
  3. Drizzle dressing over salad. Toss to coat. Just before serving, sprinkle with chow mein noodles.
