Lime Tilapia Croquettes

Ingredients


1cup  tartar sauce, divided 
2tbsp.  fresh lime juice 
1tsp.  grated lime peel 
44-oz.  tilapia fillets (thaw, if frozen) 
1/4cup  butter or margarine, divided 
1 1/4cups  breadcrumbs 
1egg, lightly beaten 
1large clove garlic, minced 
2tsp.  lemon pepper 
Coleslaw (optional) 
 

Directions

  1. Stir together tartar sauce, lime juice and lime peel.
  2. Coat large nonstick skillet with 2 tablespoons of the butter. Cook fillets 5 minutes on each side or until fish flakes with a fork. Flake fish fillets and place in large bowl. Add 1/3 cup of the tartar sauce mixture, breadcrumbs, egg, garlic and lemon pepper, stirring gently to combine ingredients. Shape into 6 patties.
  3. Cook patties in batches in remaining 2 tablespoons butter over medium-high heat 5 minutes on each side or until golden brown. Serve immediately with remaining tartar sauce mixture and coleslaw, if desired.
