Healthy Poached Flounder

Ingredients


2cloves garlic, minced 
1tbsp.  olive oil 
2/3cup  low-sodium chicken broth 
2tbsp.  lemon juice 
1tbsp.  lemon peel 
2lb.  flounder or sole fillets 
1/2cup  sliced mushrooms 
1/2tsp.  kosher salt 
1/2tsp.  paprika 
1/2tsp.  freshly ground pepper 
2tbsp.  chopped fresh parsley (optional) 
 

Directions

  1. In large skillet sauté garlic in olive oil 3 minutes or until tender. Add broth, lemon juice and peel; bring to boiling. Add fish fillets and simmer gently 3 minutes or until fish flakes with a fork. Remove fillets to shallow baking dish; keep warm.
  2. Simmer cooking liquid until it is reduced by half. Add mushrooms and cook 2 minutes. Stir in salt, paprika and pepper.
  3. Pour mushroom mixture over fillets. Brown under broiler 1 minute, if desired. Top with parsley, if desired.
