Harvest Vegetable Minestrone |

Ingredients
| 1 | tbsp.
olive oil
| | 1 | cup
chopped onion
| | 3 | carrots, diced
| | 2 | ribs celery, diced
| | 2 | cloves garlic, minced
| | 4 | cups
reduced-sodium chicken broth
| | 1 | (28-oz.)
can crushed tomatoes
| | 1 | tsp.
Italian seasoning
| | 1 | (15-oz.)
can kidney beans, drained and rinsed
| | 2 | potatoes, peeled and diced (about 12 ounces)
| | 1 | cup
cut green beans
| | 2 | cups
cooked ditalini or small pasta

Directions- Heat oil over medium heat in large stockpot.
- Add onion, carrots and celery. Cook, stirring occasionally, about 5 minutes or until onions are translucent. Add garlic and cook for 1 minute.
- Add chicken broth, crushed tomatoes and Italian seasoning; stir to combine. Bring to boiling.
- Add potatoes, kidney beans and green beans. Reduce heat to medium-low. Cover and cook 20 minutes or until potatoes are tender, stirring occasionally. Stir in pasta; cook until heated through.
