Harvest Vegetable Minestrone

Ingredients


1tbsp.  olive oil 
1cup  chopped onion 
3carrots, diced 
2ribs celery, diced 
2cloves garlic, minced 
4cups  reduced-sodium chicken broth 
1(28-oz.)  can crushed tomatoes 
1tsp.  Italian seasoning 
1(15-oz.)  can kidney beans, drained and rinsed 
2potatoes, peeled and diced (about 12 ounces) 
1cup  cut green beans 
2cups  cooked ditalini or small pasta 
 

Directions

  1. Heat oil over medium heat in large stockpot.
  2. Add onion, carrots and celery. Cook, stirring occasionally, about 5 minutes or until onions are translucent. Add garlic and cook for 1 minute.
  3. Add chicken broth, crushed tomatoes and Italian seasoning; stir to combine. Bring to boiling.
  4. Add potatoes, kidney beans and green beans. Reduce heat to medium-low. Cover and cook 20 minutes or until potatoes are tender, stirring occasionally. Stir in pasta; cook until heated through.
