Grilled Salmon and Spinach Salad

Ingredients


4cups  fresh spinach leaves 
1avocado, seeded, peeled and diced 
1 1/2cup  cherry tomatoes, halved 
1/4to 1/3 cup crumbled goat's-milk cheese 
1/2cup  chopped walnuts, toasted 
1/2cup  balsamic vinegar 
1/4cup  olive oil 
46-oz.  salmon fillets (thaw, if frozen) 
1/4tsp.  salt 
1/4tsp.  pepper 
 

Directions

  1. Combine spinach, avocado, tomatoes, cheese and walnuts in large bowl; toss gently.
  2. Combine balsamic vinegar and olive oil in small bowl. Brush 1/4 cup balsamic mixture over salmon fillets; season with salt and pepper.
  3. Coat grill rack with nonstick cooking spray. Preheat grill to medium. Grill salmon, covered with grill lid, 4 to 6 minutes on each side or until fish flakes with fork. Arrange over spinach leaves and serve with remaining balsamic mixture.
