Gluten-Free Cinnamon Bread |

Ingredients
| 1/4 | cup
vegetable oil
| | 1/4 | cup
brown sugar, packed
| | 1 | large egg
| | 1 1/4 | cup
brown rice flour
| | 1/2 | tsp.
baking soda
| | 1/2 | tsp.
baking powder
| | 1 | tsp.
ground cinnamon
| | 1/2 | cup
raisins, hydrated in hot water for 10 minutes
| | 1/2 | cup
milk
| | 1/4 | cup
applesacue
| | 1/2 | cup
finely chopped pecans (optional)

Directions- Preheat oven to 350°F. Lightly grease 9x5x3-inch bread pan; set aside.
- In a medium bowl, mix oil and sugar together with a wooden spoon. Mix in egg.
- Add flour, baking soda, baking powder and cinnamon. Stir to incorporate, being careful not to overmix. Add raisins, milk, applesauce and finely chopped pecans, if desired.
- Pour mixture into prepared bread pan and bake 35-40 minutes. Cool in bread pan before removing.
