Easy Tilapia Tacos

Ingredients


1lb.  tilapia fillets, cut into 8 pieces 
1/2cup  medium salsa, divided 
8taco shells 
115-oz.  can black beans 
1/2cup  frozen corn, thawed 
1 1/2cups  pre-washed salad greens 
1cup  shredded Cheddar cheese (4 oz.) 
 

Directions

  1. Preheat oven to 450°F. Place fish in shallow baking pan. Top with 1/4 cup salsa. Bake uncovered 10 minutes or until fish flakes with a fork. Wrap taco shells in foil and add to oven last 5 minutes, if desired.
  2. Meanwhile, rinse and drain beans. Add corn and remaining salsa.
  3. Divide greens among taco shells; top with black bean mixture, fish and cheese.
