Easy Sweet Potato Fritters

Ingredients


1cup  flour 
1tsp.  baking powder 
1/4tsp.  salt 
1/4cup  milk 
2eggs, beaten 
2tbsp.  butter or margarine, melted 
2cups  shredded raw sweet potato 
4slices bacon, cooked and crumbled 
Vegetable oil 
Syrup (optional) 
 

Directions

  1. Combine flour, baking powder and salt; stir well. Add milk, eggs and butter; stir until smooth. Add sweet potato and bacon; mix well.
  2. Heat 3 to 4 inches of oil to 375ºF in a Dutch oven. Carefully drop batter by rounded teaspoonfuls into hot oil. Cook only a few at a time. Fry 2 minutes or until fritters are golden brown, turning once. Drain on paper towels. Serve warm with syrup, if desired.
