Easy Sweet Potato Fritters |

Ingredients
| 1 | cup
flour
| | 1 | tsp.
baking powder
| | 1/4 | tsp.
salt
| | 1/4 | cup
milk
| | 2 | eggs, beaten
| | 2 | tbsp.
butter or margarine, melted
| | 2 | cups
shredded raw sweet potato
| | 4 | slices bacon, cooked and crumbled
| | Vegetable oil
| | Syrup (optional)

Directions- Combine flour, baking powder and salt; stir well. Add milk, eggs and butter; stir until smooth. Add sweet potato and bacon; mix well.
- Heat 3 to 4 inches of oil to 375ºF in a Dutch oven. Carefully drop batter by rounded teaspoonfuls into hot oil. Cook only a few at a time. Fry 2 minutes or until fritters are golden brown, turning once. Drain on paper towels. Serve warm with syrup, if desired.
