Curry Flavored Potato Salad

Ingredients


4lb.  unpeeled red potatoes 
2celery ribs, chopped 
1/2small red onion, diced 
3hard-cooked eggs, sliced 
2/3cup  fat-free sour cream 
1/2cup  light mayonnaise 
1/4cup  white wine vinegar 
2tbsp.  curry powder 
1 1/2tsp.  salt 
1/2tsp.  pepper 
 

Directions

  1. Cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool. Peel potatoes, if desired, and cut into 1-inch cubes.
  2. In large bowl stir together potatoes, celery, onion and eggs.
  3. Stir together sour cream, mayonnaise, vinegar, curry, salt and pepper. Gently toss with potato mixture. Serve immediately or cover and chill.
