Cilantro and Lime Mahi Mahi |

Ingredients
| 2 | shallots, chopped
| | 1/4 | cup
chopped fresh cilantro
| | 1/2 | cup
lime juice
| | 2 | tbsp.
olive oil
| | 1/4 | tsp.
salt
| | 1/4 | tsp.
freshly ground pepper
| | 4 | 4-oz.
mahi mahi fillets
| | Fresh cilantro sprigs (optional)

Directions- Combine shallots, cilantro, lime juice, olive oil, salt and pepper in medium bowl. Pour over mahi mahi. Preheat grill to medium-high; coat grill rack with nonstick cooking spray.
- Grill on rack, covered with grill lid, 6 to 8 minutes or until fish flakes with a fork. Garnish with fresh cilantro, if desired.
