Brown Sugar Pecan Spinach Salad

Ingredients


1 3/4cups  pecan halves 
3/4cup  packed light brown sugar, divided 
1/4cup  butter or margarine, melted 
3/4tsp.  cinnamon, divided 
1/2cup  white wine vinegar 
1/3cup  olive oil 
1/4tsp.  salt 
1/4tsp.  freshly cracked pepper 
27-oz.  pkg. fresh spinach 
2ripe pears, thinly sliced 
1small red onion, chopped 
 

Directions

  1. Preheat oven to 325°F. Lightly grease baking sheet. Stir together pecans, 1/2 cup of the brown sugar, butter and 1/2 teaspoon of the cinnamon; spread nut mixture on baking sheet.
  2. Bake 15 to 20 minutes, stirring often. Cool and break apart.
  3. Whisk together white wine vinegar, olive oil, remaining 1/4 cup brown sugar, salt, pepper and remaining 1/4 teaspoon cinnamon in small bowl; set aside.
  4. Combine spinach, pears and onion in large bowl. Drizzle with vinegar mixture and sprinkle with pecans.
