How to Peel and Chop Onions (Without Tears)

The sulphuric compounds in onions don’t have to bring you to tears when you’re slicing and chopping onions. Try these tips for staying dry-eyed: - Soak onions in water before cutting; water dilutes the sulphuric compounds that cause tearing
- Freeze onions for about 10 minutes before cutting. The sulphuric compounds won’t react as fast when they’re cold
- Light a candle — it’ll burn away the sulphuric fumes
Peeling Onions: - If cutting into rings, first cut a small slice off of the stem and root ends; hold under running water and peel the skin off
- If not cutting into rings, cut the onion in half lengthwise and peel
Chopping Onions: - With a sharp knife, slice off the stem end of the onion; leave the root end alone
- Set the onion, cut end down, on a cutting board and slice it down the middle lengthwise; peel
- Place onion half, cut-side down, on a cutting board. Make parallel horizontal cuts almost to, but not through, the root end
- Now make parallel vertical cuts almost to, but not through, the root end
- Finally, slice across the grain to cut pieces of desired size
